Beaten Chicken

·        1½ lb               chicken (or mutton)

·        ½   lb               small potatoes

·        ½ lb                 onions peeled and slightly quartered on top

·        9 pods             garlic

·        1/8 tsp              cinnamon powder

·        7 pieces            cloves

·        1 tsp                 pounded ginger

·        dash                 pepper

·        1 tbsp               ghee

·        2 tbsp               oil        

·        1 cup                water

·        1 tbsp               scy sauce (light)

·        1 tsp                 scy sauce (thick)

·        1½ tbsp            sugar

·        ½ tbsp              salt

·        1½ tbsp            vinegar

·        Half boil the potatoes in water with ½ tsp salt added. Strain and set aside.

·        Cut chicken into big pieces. (If mutton, cut into thick slices). Beat lightly on both sides. Marinate  with ginger, cinnamon powder, cloves, pepper, light soy sauce, vinegar, sugar (1 tbsp), salt and let stand for about an hour.

·        In a cooking pan put ghee and oil and heat. When hot, roast the potato till golden. Strain.

·        Add meat to pan and heat till golden on both sides. Add cup of water and cook  till meat is tender. Add onions, potatoes, thick soy sauce and remaining sugar.

·        Transfer to serving bowl.
