Pork  Salad

1 lb pork (or beef) cut into thin strips 1" wide, 2" long

1 tbs thinly sliced lemon grass

1½ tbs well-pounded parched rice

½ cup thinly sliced onion

½ cup coarsely chopped mint leaves

4½ tbs lime juice

3 tbs fish sauce

½ cup chopped coriander grcers

½ tbs ground dried chili

1 tbs chopped spring onion

¼ tsp sugar

Lettuce

                                    Grill sliced pork strips to medium rare.

                                    In mixing bowl, mix all remaining ingredients well.

                                    Add pork and toss well.

                                    Serve the pork salad on a bed of lettuce with spring onions.

                                    Serves 3 or 4
